Mexican Bar-B-Que

No mexicans are hurt in the making of this meal

Marinade:
4 to 5 lbs top sirloin roast cut 1/8 inch thick
1/2 cup oil
1/3 cup soy sauce
1/4 cup lemon juice
2 Tablespoons mustard
1/4 teaspoon garlic powder
1 teaspoon pepper
Corn Tortillas
Whole green chiles
cheese
and any other toppings you like with mexican food

Put first 7 ingredients in bowl and marinade over night. Butter both sides of tortillas and place on grill. cook until one side is done. Turn and add meat, cheese and green chili. Fold and cook until tortillas are done.

Enjoy with any toppings.

Beef Stroganoff

I love this recipe. It is the best homemade beef stroganoff I have had.

1 lb round steak
2 Tablespoons butter
1 small onion chopped
garlic to taste
2 1/2 cups water
2 beef bullion cubes
1/8 cup ketchup
1/2 teaspoon salt
1/2 teaspoon mustard
2 Tablespoons flour
1 cup sour cream
Wide Noodles cooked

Place meat, butter onion and garlic into a fry pan cook until meat is browned. Remove meat

Mix:
water, bullion cube, ketchup, salt, mustard. Stir into onion and garlic to make thick gravy. Add browned meat to gravy. Simmer about 5 minutes. After 5 minutes tir in 1 cup sour cream. Serve with noodles or mashed potatoes.

JELLO PUNCH SLUSH

I love this recipe it is so refreshing. Some recipes call for 1 can of lemonade but I don't use it.


4 cups water
4 cups sugar
(dissolve sugar)
1 large box of jello any flavor
7 cups water (3 hot 4 cold)
(dissolve jello)
1 large can of pinapple juice
1 to 2 2 liter 7-up

Mix well and add to freezer bags (I use 2) and freeze 24 hours. place frozen mix into a punch bowl and break up with a knife add 7 up to consistency. If you like real slushy just 1. More punchy add 2. Also you can use the real slushy punch and put over vanilla ice cream for a treat

PIZZA ROLL

Rhodes Bread Loafs (1 loaf for 3 people)
Butter
Garlic Salt
Pepperoni
Mozzarella Cheese Shredded
Marinara Sauce and/or Ranch

Thaw out Loaf and roll out. spread butter over dough. Sprinkle Garlic Salt over butter. Place pepperoni over that, then cheese. Roll long ways and tuck seams under roll including ends. Place into a 350 degree oven and bake about 20 to 25 minutes. Watch it though until Golden brown. Dip into Marinara or Ranch Sauce.

Rotisserie Style Chicken

Rotisserie Style Chicken


Ingredients:

4 lb. whole chicken
2 T. olive oil
1 T Lawry's Seasoned Salt
1 t. Lawry's Seasoned Pepper

Directions: Preheat oven to 375 degrees. Rub Chicken with olive oil. Combine Lawry's Seasoned Salt and Lawry's Seasoned Pepper and sprinkle over outside and inside cavity of chicken. Roast in preheated 375 degree oven for 1 hour 20 minutes or until meat thermometer inserted in thickest part of thigh reaches 180 degrees.

**Edited to add: Roast the chicken uncovered.

Heavenly Brownies


I stole this recipe from my friends blog. I will do that a lot since she has a great blog and I just want to add to mine. Hee Hee.


Ingredients:
2 sticks butter (1 c.)
2 c. sugar
1 1/2 c. flour
1/2 c. nuts (optional)
3 T cocoa
4 eggs
1 t vanilla
1 jar marshmallow creme (sm jar)

Directions: Melt together butter and cocoa. Beat eggs and sugar together, and add cocoa mixture alternately with flour. Add nuts and vanilla. Bake in 9 x 13-inch pan at 35j0 degrees for about 30 minutes. Spread top with marshmallow creme as soon as it is removed from oven. Let coll and frost with the following.

FROSTING: Melt together 1/2 stick butter and 1 heaping T cocoa. Add 1/2 box Powdered sugar. Beat with 1 T milk. Spread on brownies.

**note...I used salted butter, if you use unsalted butter I would add a little salt to the brownie mix and the frosting. To make the marshmallow creme a little easier to spread, you could melt it a little by placing the jar into a bowl of hot water. I didn't have a box of powdered sugar, I just added until it was the consistency that I wanted

Tortilla Soup

I have never made tortilla soup before so I decided to try it and low and behold we LOVED IT!

5-6 chicken breasts
1 teaspoon paprika
1 large can chopped tomatoes
1 Tablespoon chili powder
4 small cans chicken broth (I used 2 14 oz cans and it was good)
1/2 teaspoon cayenne pepper
1 tub Baca's green chili
salt and pepper for taste

Boil chicken or put in crockpot until cooked. Mix all the other ingredients together. Shred chicken and add to soup mixture. Garnish with sour cream, avacados, tomatoes, tortilla chips, cheese, onion and olives. (or whatever you like)
